Stevia

24 April 2018 by Margherita Leoni

Steviol glycosides from the stevia plant are used in foods as a calorie-free natural sweetener, and are approximately 300 times sweeter than sugar. Along with Newfoss (process development) and Koers (grower), ACRRES works on sustainable extraction of the sweetener from the plant. Tests have shown that the developed extraction method is very effective, but that the purity of the product is lower than desired. The focus is now on improving the process to increase the purity, and on the factory design. Market research also forms part of this project.

  • Extraction of steviol glycosides from fresh Stevia using acidified water; clarification by ultrafiltration and concentration by nanofiltration

As part of the PPS Kleinschalige bioraffinage project (WP1b), fresh Stevia material was used in the extraction of steviol glycosides using water acidified through conversion of sugar by microorganisms naturally present on the plant. The extraction was followed by clarification using ultrafiltration and concentration by nanofiltration.
